  • 2 cups all-purpose flour
  • ¼ cup sugar
  • 1 whole egg, at room temperature
  • 1 ¾ cup milk, at room temperature
  • ¼ cup unsalted butter, melted
  • 1 ¾ tbsp baking powder
  • ¼ tsp baking soda
  • 1 tbsp vanilla extract
  • ½ tsp salt
  • 1 tbsp mayonnaise
  • Butter for frying


  • Step 1: In a bowl, add all-purpose flour, sugar, baking powder, salt, and baking soda and mix well. 
  • Step 2: Dip in the center of the flour mix to make a well. Add egg, vanilla extract, milk, and butter.
  • Step 3: Using a whisker, whisk the wet ingredients first and slowly include dry ingredients until everything is well incorporated. 
  • Step 4: Add mayonnaise and mix well until the mixture is lump-free. Make sure you don’t overwhip the mixture. Set aside to let it rest for about 5 – 10 minutes.
  • Step 5: Meanwhile, place a non-stick pan on medium heat. Once it is hot, reduce the heat to low and lightly grease the pan with butter.
  • Step 6: scoop out ¼ cup of pancake batter and pour it on the hot pan. Spread the batter using the back of the cup gently.
  • Step 7: once you start seeing small bubbles appearing on the surface and the edges start turning golden brown, flip it.
  • Step 8: once the other side gets color, remove the pancake from the pan. Grease the pan again with butter and continue to cook the rest of the pancakes.
  • Step 9: Serve these with maple syrup, whipped cream, fresh berries, or nuts!
